Finca Naranja, managed by Lorenzo Arbildo, is situated in the San Ignacio region of Cajamarca, Peru. Located at an impressive altitude of 1,950 meters above sea level, the farm benefits from outstanding growing conditions that contribute to the production of premium-quality coffee. In Peru, most coffee is processed using the Washed method. Many producers have their own wet-milling equipment, while smallholders often bring their cherries to central processing units or cooperatives. Typically, the coffee is depulped on the same day it’s harvested, then undergoes a 12–18-hour open-air fermentation (longer in cooler, high-altitude areas) before being washed to remove mucilage. Drying methods vary, including patios, raised beds, parabolic dryers, and mechanical dryers.
